Born and raised in Hong Kong, Chris Chan Yok Hong grew up in a family of chefs — his father, mother and three brothers are all toques. He started working in the culinary field at age 16 and has amassed more than 30 years of experience. His resume includes work at the Harbourview Hong Kong, Park Lane Hong Kong, Manhattan Group Hong Kong, CCA International Hong Kong, Hyatt Regency Macau and Mandarin Oriental, Macao. The chef also has served as a lecturer at the Institute for Tourism Studies in Macau.

    Whether you’ve got a big business meeting the next morning or you’re under the legal drinking age, Aurora offers our guests various mocktails and non-alcoholic drinks to quench your thirst and tickle your tongue. Our menu serves up more than 10 mocktails for you to choose from, and we also provide non-alcoholic beer.

    Does Aurora offer any special or rare bottles of wine?

    If you’re feeling indulgent (or particularly generous), Aurora offers a variety of special and rare wines. We are more than happy to boast that our restaurant houses the Chateau Latour Vertical Collection 1945 to 2005, worth $1.5 million. The Chateau Latour name dates back to the 1300s, with the vineyard created in the 1680s. Chateau Latour is located in the heart of the Médoc wine region northwest of Bordeaux, and the vineyards main territory overlooks the estuary of the Gironde River, helping to ensure a mild climate over the centuries. The Vertical Collection consists of one bottle of each vintage from 1945 to 2005, and you can ask your server if you wish to purchase one of them.

    Does Aurora offer wine pairings?

    Aurora provides wine pairings for our guests, and we like to change it up. Every two months we choose a new degustation, and there are various options depending on the number of courses you wish to order. For five-course meals, you can choose from one pairing priced at HK$764 plus a 10 percent service charge, or a pairing for HK$1026 plus a 10 percent service charge. If you’ve got the appetite or the passion for food to order a seven-course meal, wine pairings run either HK$959 plus a 10 percent service charge, or HK$1347 plus a 10 percent service charge. It’s up to you which pairing you choose, and our staff is more than willing to help guide you through your decision.

    Does Aurora have a bar?

    If you arrive early to your reservation at Aurora, take a quick stop at the bar located in the front of the restaurant. Sit in one of the comfy leather chairs and order from our extensive wine list, as well as our cocktail menu with a variety of liquors. While you’re sipping your drink, make sure you gaze out of the floor-to-ceiling windows at the stunning views of the Macau peninsula and South China Sea. We also have a wooden outdoor terrace with smaller tables where you can take a moment to relax as well. If you wish to make a post-dinner stop at a bar, there’s also the option of heading up to the top floor of Altira Macau to the 38 Lounge, which also offers incredible views, live music and a slew of cocktails to choose from.

    Throughout the year, our menu at Aurora features seasonal dishes, where some of ingredients are flown in from Italy. If you visit us during our fall and winter seasons, you’ll see our menu sprinkled with cold weather favorites such as venison, bison and guinea fowl. Join us in the fall for truffles and mushrooms interspersed throughout our dishes, and the summer months allow for juicy peaches and melons from Italy, or try a summer salad with organic vegetables and both green and white asparagus. Depending on the time of year you choose to dine with us, you can ask your server what specific foods are in season and available on the menu.

    At Aurora, we offer a few knock-your-socks-off desserts that are sure to leave you in a state of sweet euphoria. The Chocolate Manjari Tentation is our crème de la crème of signature desserts. Another top-notch treat is our hot chocolate fondant with caramelized banana and Italian pistachio. If you choose to order the chocolate fondant, it is important to order in advance since it takes 10 minutes to prepare. Besides our signature dishes, we also offer various other desserts such as an Italian tiramisu with fruit compote and raspberry sorbet, panna cotta with coconut and mango parfait, and yogurt ice cream.

An important note about this particular dish — let your server know in advance since it takes 10 minutes to prepare. If you want something a little lighter, select the lemon tart and honey meringue with mojito sorbet and lemon reduction.     What is the cheese course like at Aurora?

    If you like a good cheese course during your meal, Aurora offers a variety of course selections for you to choose from. Depending on how much you want to order, we provide Italian cheese platters of three (HK$116), four (HK$153) and five (HK$182) selections. The cheeses you can choose from on the menu include fresh, soft, semi-hard and hard. Our specialty is the Burrata Pugliese from the southern region of Italy. Burrata is a cheese made from mozzarella and cream, where the outer shell is solid mozzarella and the inside is a mixture of mozzarella and cream. Burrata comes from the Italian word for “butter,” hinting at its smooth, soft texture and creamy taste. Other cheeses to make your mouth water include a 24-month-old Red Cow parmesan (best quality), crottin goat cheese matured in small holes in the cellar, and Bettelmatt, a cheese made from grass-fed cows raised in the high-altitude region in the Piedmont Formazza Valley.     At Aurora restaurant, we offer vegetarian and vegan options on the menu. The Italian cuisine provides numerous salad and pasta dishes, and Aurora is no exception. If you’re dining with us for lunch, start off with an appetizer such as buffalo mozzarella and Roman tomato with roasted bell pepper, garden vegetables and avocado. For a pasta dish, try something such as orecchiette with fresh cherry tomatoes, rocket salad and semi-hard ricotta cheese. The dinner menu also includes some vegetarian-friendly fare, such as the garden vegetable salad with buffalo ricotta, carrot coulis and bergamot oil.

    What is the menu like at Aurora?

    The menu at Aurora draws largely on influences from the southern Italian region of Puglia, where our chef Michele dell’Aquila calls home. Using traditional Mediterranean recipes, the menu combines concepts and techniques to create authentic yet sophisticated dishes for our guests. If you’re visiting us for lunch, you’ll find bites such as Norwegian salmon with fennel, orange salad and cucumber consommé or beetroot ravioli with goat cheese and Camembert, pistachio and watercress sauce. Those who book a dinner reservation can expect to find dishes such as Australian Wagyu beef tenderloin with seasonal vegetable casserole, zucchini and mint purée or handmade fettuccine with Mediterranean mussels, sea urchin, parsley juice and herb oil.
