You’ll find B&B Ristorante, the Italian restaurant named for its owners Mario Batali and Joe Bastianich, inside The Venetian Resort Hotel Casino. The Forbes Travel Guide Four-Star hotel offers more restaurants than you could probably eat at in a week’s time, but this one is easy to find and worth a look. Once inside The Venetian, head toward restaurant row; B&B will be the last restaurant on your right side before you reach the waterfall area separating The Venetian and its sister-hotel, The Palazzo Resort Hotel Casino, across the hall from Delmonico Steakhouse. You almost can’t miss B&B; look for a small patio area in the marble hallway outside of a small restaurant, and you’ll see the entranceway to one of Las Vegas’ best restaurants.

A few of our Forbes Travel Guide editors’ favorites include the Venetian Spritz, which has an appeasing mix of aperol and prosecco with an orange wedge and olive, and the Blood Orange Cosmo, which has a blend of Ketel One Citroen, blood orange juice, Cointreau and lime. We also enjoyed the Bellini, with white peach puree and prosecco, and the Negroni, made with New Amsterdam Gin, Campari and Carpano Antica Formula.

    B&B Ristorante does have a bar. In fact, as a collaboration between chef Mario Batali and restaurateur/vintner Joe Bastianich, this Forbes Travel Guide recommended restaurant places a special emphasis on fine Italian wines and spirits.
     
    Though many fine-dining establishments in Las Vegas and beyond fill their cellar with wines from around the globe, B&B exclusively carries wines from Italy. We don’t feel that choice is the least bit limiting, neither in terms of quality or quantity; instead, we enjoyed comparing and contrasting wines produced in different parts of the country, and loved the selection of rare and regional wines you won’t find in other restaurants.
     
    In addition, this recommended restaurant offers a number of imported Italian beers, including Tosta, a rich chocolate stout from Piedmont. The aperitif list is also heavy on Italian spirits and includes a rare amaro, a bitter spirit that aids digestion.

    In line with its green initiatives, B&B Ristorante offers only Natura still and sparkling waters. The Natura system puts water through triple-carbon filters and UV sterilization, which the restaurant serves in reusable carafes. This system eliminated the use of bottled water, which B&B saw as being wasteful and bad for the environment. Throughout your meal, servers will come around regularly to ensure that your glass is never on empty. You’ll still enjoy clean, crisp water service, but without the weight of plastic or glass bottles (both literal and figurative weight). So drink up, and enjoy B&B Ristorante’s environmentally-friendly water service.

    B&B Ristorante offers only 100 percent Italian wines, and uses four prerequisites to choose wines that gel with chef Mario Batali’s cuisine. Those four tenets are:

    - Does the winery use sustainable farming practices?
    - Is the wine a distinct expression of its style?
    - What are the most dynamic wines belonging to our family?
    - Which wines are most loved by B&B’s wine team?

    Using these four components, the Las Vegas restaurant has chosen an extensive list of wines that includes verticals of Angelo Gaja Costa Russi barbaresco from 2007, 2005, 2000, 1999, 1985 and 1982, a Taurasi Riserva Mastroberardino 1968 for $1,200, and a Giacomo Conterno Monfortino 1958 for a cool $2,750.

    You’ll find sparkling, white and red wines on the menu, with wines on the list divided up by regions of Italy.     Who is the sommelier of B&B Ristorante?

    B&B Ristorante boasts three sommeliers on staff, with at least two on the floor on any given night, and all three on the weekends. Those sommeliers include Pascal Bolduc, Michael Kothe and Carlos Costa, who you’ll see flitting about the dining room, offering advice and checking in on other diners. The restaurant recently had its wine director since the Las Vegas restaurant’s opening, Victor Pinkston, leave for another of Mario Batali’s restaurants in New York. But Kirk Peterson, the wine director at Carnevino, Batali’s Italian steakhouse inside The Palazzo Resort Hotel Casino took over Pinkston’s duties in finding the best and most flavorful Italian wines to complement B&B Ristorante’s fine Italian cuisine.

    No Italian meal would be complete without a little vino, which is why B&B Ristorante offers wine pairings with its tasting menus for an additional $75 per person for the regular wine pairings, or $115 per person for the “riserva selection” pairings.     When we last dined at B&B Ristorante, a pasta tasting menu as well as a regional tasting menu were available, the latter showcasing the rich culinary traditions and simple, sophisticated flavors of the southern Italian region of Calabria. Our mouths are watering just thinking about it; in particular, the grilled octopus was divine, and the blueberry lemon-thyme crostata dessert tasted like the fruits had just been plucked from the orchard.

    Celebrity chef Mario Batali focuses on tailoring the restaurant’s cuisine to each guest’s palate as best possible, particularly with the seasonal pasta tasting and regional tasting menus, recommended favorites of our Forbes Travel Guide editors. During our last meal at B&B Ristorante, our tasting menu included a number of heavenly mignardise to nibble on, including an oatmeal raisin cake, orange gelée, carob carrot toast, and another delicious bite made with Black Mission figs.
