For lunch at Glitretind you’ll find some salads and sandwiches without meat, such as the grilled asparagus and mushroom on ciabatta with Utah black pepper goat cheese, roasted yellow pepper and avocado. The kitchen can also adjust some dishes by skipping the meat, such as the Norwegian shrimp chopped salad made with romaine, radicchio, avocado, boiled egg, black pepper croutons and creamy dill vinaigrette (just hold the shrimp).

The cheese course at Glitretind Restaurant is a composed dish that changes with the season. On a recent visit to the Forbes Travel Guide Four-Star restaurant, the cheese course consisted of housemade mozzarella cheese served alongside Serrano ham. On another occasion, the cheese was Humboldt Fog goat cheese from California — the creamy, tangy cheese was served with blackberries seasoned with ginger and presented with a toasted baguette with garlic oil. Glitretind Restaurant’s servers suggest adding the cheese course at any point in your meal — including as an appetizer or finale.

The desserts at Glitretind Restaurant offer a playful and sweet end to the meal. Though the menu changes seasonally, you’re likely to find whimsical options such as a strawberry float, a peppermint patty (mint chocolate meringue, soft chocolate cake, dark chocolate custard and cookies and cream ice cream) and an indoor twist on s’mores (graham cracker semifreddo, housemade marshmallows, hot fudge and cinnamon-graham streusel). The Forbes Travel Guide Four-Star restaurant’s pastry chef also usually offers some type of crème brûlée — a recent variation was flavored with spiced pumpkin, topped with Nutella ice cream and served with a hazelnut macaroon. Glitretind also serves housemade sorbet (in flavors such as blackberry gin) and handmade truffles. The colorful truffles are not to be missed: Try flavor combinations such as red pepper tequila, sea salt and peach ginger.

Executive pastry chef Ann Giles Sweisford makes chocolates by hand for the Forbes Travel Guide Four-Star Glitretind Restaurant — the melt-in-your-mouth confections are a signature dessert and shouldn’t be missed. The dessert menu usually includes an option to sample five or six of Sweisford’s handmade chocolates, which are crafted in the Stein Eriksen Lodge’s chocolate atelier. You can choose from a variety of flavored truffles made from fine imported chocolate — selections include classic flavor combinations (peanut butter and jelly, milk chocolate, coffee) as well as less traditional pairings such as mango balsamic, strawberry pink peppercorn and red pepper tequila.

You’ll be treated to a few special gifts from the chef at Glitretind Restaurant during dinner service. You can expect a complimentary amuse bouche to start your meal at the Forbes Travel Guide Four-Star restaurant. On one recent trip, our amuse bouche balanced crisp and creamy — a halibut ceviche was served atop a slice of cucumber topped with a few cilantro leaves.
Glitretind’s bread service could also be considered a gift — you’ll be served a basket of options such as a goat cheese and herb focaccia, roasted garlic and Asiago cheese bread and a crispy housemade lavash brushed with honey butter. The bread is served with tempered butter topped with a Hawaiian black sea salt. At the end of your meal, the pastry kitchen sends out a little something sweet — we received a one-bite coconut macaroon.

The food at Glitretind Restaurant is presented simply, with a nice balance of colors and textures. The Forbes Travel Guide Four-Star restaurant served tuna crudo on an oblong white plate with two red chunks of big eye and albacore tuna elegantly draped on top of one another, sandwiching a crisp cucumber. A perfectly round ball of icy cucumber sorbet added a nice chilled component, while a large dollop of avocado mousse brought creamy balance. In another dish, a colorful salad of potatoes and beets was arranged on a long rectangular plate — each element was placed casually but carefully and topped with arugula. The restaurant offers plenty of meat-and-potatoes style entrées, and they’re usually displayed elegantly but without much fuss — a buffalo flank steak was centered on a large square white plate and surrounded by creamy white grits, diced sweet potatoes and three large Gulf shrimp, then drizzled with a deep brown sauce.

The chef at the Forbes Travel Guide Four-Star Glitretind Restaurant likes to use local produce and organic ingredients, changing up the restaurant’s menu with the seasons. The menu undergoes two complete shifts a year — in November and May — but is tweaked more often. When Dungeness crabs are in season, you can expect to see the tasty shellfish on the menu in dishes such as the open-face crab cake made with tartar sauce and celery salad on brioche. In the winter you’ll see root vegetables such as sunchokes and parsnips, plus hearty squash, ale-poached apples and winter mushrooms. Meats like buffalo, elk and wild boar are served in chili in the winter, while martinis are made with fresh fruits in the summer.

Forbes Travel Guide Four-Star Glitretind Restaurant shares its bar with the neighboring Troll Hallen Lounge, which has the same Norwegian-inspired décor, mountain views and stone fireplaces. The bar has an extensive cocktail list, offering refreshing fruity blends such as a strawberry and mint martini or the Miner’s Daughter, made with Maker’s Mark bourbon, fresh lime and pomegranate juice, then finished with ginger ale. The Stein’s house-made Bloody Mary is made with imported Finnish vodka, Absolut Peppar vodka and limoncello and topped with celery, olives, lemon and spicy pepperoncini.
Wines and champagne are available by the glass, including labels such as Perrier-Jouët, Willakenzie Estate and J. Lohr Vineyards. Beer drinkers have their pick of a variety of Belgian, Austrian and German beers, plus some local brews from the Salt Lake City-based Epic Brewing Company. Not in the mood for alcohol? The bar offers housemade lemonade, plus non-alcoholic wine from the California’s Navarro Vineyards.

Glitretind and Troll Hallen share a kitchen, so while the bar menu doesn’t include the exact dishes you’ll find at Glitretind, you can order food with the same tasty, hearty style while relaxing at the casual bar.
Troll Hallen’s bar lets you order snacks, dinner or dessert — we recommend the casual snack menu, which features crowd pleasers such as Stein’s garlic cheese fries made with Yukon Gold potato wedges, garlic, herbs, Asiago cheese, and served with chef Zane Holmquist’s fry sauce (his take on a dip you’ll find all over Utah). The wild game chili — made with buffalo, elk and wild boar — is also a hit. If you’re up for sharing, the bar also serves a variety of fondue dishes, including a traditional Gruyére and Emmentaler cheese fondue served with bread from a local bakery. The bar’s signature Stein’s burger (served in Glitretind’s dining room at lunch only) is another favorite way to end a day on the slopes. It’s made with eight ounces of Angus beef and is topped with aged white cheddar and crispy onions.

On a recent visit, Schwindt helped us narrow down our selections to three red wines (Spanish, Chilean and California varieties) to pair with a buffalo flank steak. Schwindt is noticeably unpretentious in her wine service, offering affordable picks in addition to pricey bottles.
Schwindt oversees purchasing for the Forbes Travel Guide Five-Star Stein Eriksen Lodge’s 10,000-bottle wine cellar — that’s in addition to a wine room in Glitretind that holds 2,370 bottles. The restaurant offers more than 750 different wines, ranging from local to international varietals. Schwindt hosts wine seminars in the hotel’s temperature- and humidity-controlled wine cellar. Schwindt also helped design Glitretind’s wine room, which features a split-level cooling system to keep both the red and white wines at the perfect serving temperature.

To warm up after a long day on the slopes, consider a Butterball shot — amaretto and butterscotch liqueur is served with a dollop of whipped cream and a sprinkle of pumpkin spice.

You can also order up a virgin Bloody Mary and fresh lemonade (which is used to create other concoctions like strawberry lemonade and Arnold Palmers).
Glitretind’s teas are provided by Harney & Sons and include a selection of flavors such as mint, Earl Grey, English breakfast and a decaf ceylon black tea. Locally roasted coffee and espresso is provided by Millcreek, based in nearby Salt Lake City. The restaurant serves Voss bottled water, Acqua Panna still water and San Pellegrino sparkling water. A variety of juices are available during the breakfast service (orange, grapefruit, apple, cranberry, pineapple, prune) as well as hot chocolate topped with whipped cream.

Scandinavian touches such as decorative plates and ladder-back chairs fit the Stein Eriksen Lodge’s Norwegian personality — the hotel is named for a legendary alpine skier.
