    Ruskell joined Montage Beverly Hills after five years at the helm of bakery operations at Montage Laguna Beach. He has been a baking instructor and chef at the New England Culinary Institute, the owner and operator of Pastry Maxine in Scottsdale, chef patissier at The Phoenician in Phoenix and pastry apprentice at Hotel Gray d’Albion’s Le Royal Gray in Cannes, France.

  • Scarpetta, located inside the Five-Star Montage Beverly Hills, has a dessert menu that features innovative creations from award-winning executive pastry chef Richard Ruskell. The seasonal menu has seven different options, all priced at $11. And while there isn’t just one signature Scarpetta dessert, each is Italian-inspired and complements chef Scott Conant’s authentic dinner menu. A few of our favorites include the classic chocolate cake served with burnt orange-caramel gelato and espresso sauce, the vanilla caramel budino with gianduja chocolate sable cookies, and the seasonal citrus and vanilla flan, served with citrus segments, candied kumquat, pummel and yuzu curd.
  • At Scarpetta, located inside the Five-Star Montage Beverly Hills, loyal diners will benefit from renowned celebrated chef Scott Conant’s seasonal menu. Customers who return multiple times to the Italian restaurant during the year will appreciate Conant’s food philosophy where seasonality reigns supreme — even when it comes to wine. The complimentary bread basket, delivered to your table before you have a chance to ask for it, is quite the treat. It features four different types of bread — sun-dried tomato, whole-wheat focaccia, ciabatta and Stromboli. You can choose to dunk the bread in a red pepper and eggplant spread, standard olive oil, or a citrus- and herb-infused olive oil.
  • As a part of chef Scott Conant’s food philosophy, Scarpetta’s menu features dishes made from seasonal produce and products in order to create flavor-filled dishes with simple ingredients. Health-conscious eaters are likely to appreciate the light, fresh options on the main menu — expect seasonal picks such as roasted sea scallops served with cauliflower and capers, and black cod served with caramelized fennel and tomatoes. The vegetarian menu features more low-calorie dishes such as the local farmer’s market salad served with herbs and truffle vinaigrette, and the puree of sunchoke soup made with farro, scallops and mushrooms. Of course, you can always alter a dish at the Four-Star restaurant by simply letting your server know your preferences.
  • While Scarpetta does not offer a children’s menu, the eatery is a family-friendly place with a slew of Italian options for kids to choose from. Renowned chef Scott Conant focuses on seasonal ingredients so that each dish is full of flavor, from grown-up options such as duck and foie gras ravioli to kid-friendly options such as spaghetti with tomato and basil (a signature dish of Conant’s). Families may prefer the lunch menu to the dinner menu — head to the Four-Star Scarpetta from 11 a.m. to 3 p.m. to order kid favorites like the burger and the tuna salad sandwich.
  • All but one bottle found on the wine list at Scarpetta can be served by the glass. Bottles hail from regions such as Sicily, Tuscany and Veneto, and options include an Esperto pinot grigio 2009 from Veneto, a Gulfi carjcanti 2006 from Sicily, a Fontanafredda barolo 2005 from Piedmont and a Solaria brunello di montalcino 2000 from Tuscany. You’ll also notice a list of sparklers to choose from by the glass, such as a Fantinel rosecco from Veneto or champagne Krug, Grande Cuvee from Reims. If you’re having trouble pairing the wine with your handmade pasta and sauce, simply ask the wait staff for the sommelier, who will be happy to help.
  • When you’re parched at Scarpetta, quench your thirst with either bottled, still or sparkling water. You can expect great service — with wait staff refreshing your water before it’s even empty — at the high-end Italian restaurant. The Beverly Hills hot spot from acclaimed chef Scott Conant also offers other beverages, including soda, coffee, and, of course, Italy’s well-known drink, the cappuccino. For something a little stronger, try one of the fine Italian wines, which come from regions such as Veneto, Sicily and Tuscany.
  • Scarpetta, located inside the Mediterranean-inspired Montage Beverly Hills, has three seating areas that flow from one to the next — the main dining room, the bar and the outdoor terrace. You’ll find the 44-seat bar inside Scarpetta off to the left beyond the hostess stand. From here, you have great views of the Beverly Canon Gardens through double-height windows. The mostly Italian wine menu, features bottles from Veneto, Sicily and Tuscany and complements chef Scott Conant’s authentic Italian cuisine. Illuminated globes hang from the ceiling and provide dim lighting creating an intimate environment ideal for a pre- or post- dinner cocktail.
  • The bar inside Scarpetta is a large one — it seats up to 44 people — and has a big menu to match. Varietals from the mostly-Italian wine menu run from $12 to $43 a glass, and from $44 to $175 a bottle. The wine menu changes seasonally and showcases high-end Italian wines — sparklers, reds and whites — from regions such as Veneto, Tuscany and Sicily. Want to sip on something sweeter? Opt for one of the $16 signature cocktails, such as the Torino (Grey Goose Citrus, strawberry and rock candy syrup) or the Spritz (Aperol, limoncello, Grey Goose Citrus and prosecco). Beer enthusiasts have six choices: Amstel, Newcastle, Peroni, Heineken, Stella Artois and Moretti La Rossa, all priced at $8.
  • It’s only appropriate to toast to the authentic Italian dishes at Scarpetta with a glass of Italian wine. The Four-Star restaurant’s sommelier, Mark Hefter, can recommend options to pair with your dinner, whether it’s a bottle from Veneto, Sicily or Tuscany. (One of the great young talents in the wine world today, Hefter has earned the title of Advanced Sommelier, the second-highest level awarded by the Court of Master Sommeliers, and is a Certified Specialist of Wine from the Society of Wine Educators.) The wine menu changes seasonally with options such as Esperto Pinot Grigio 2009 from Veneto, Fontanafredda Barolo 2005 from Piedmont and a Solaria Brunello di Montalcino 2000 from Tuscany. The four-course Farmer’s Market Tasting Menu features pre-set wine pairings for additional $35. 
  • Scarpetta, located within the luxe Mediterranean-inspired Montage Beverly Hills, has an array of special liquors, including a long list of Cognacs — standouts include Richard Hennessy, Martell, Rémy Martin and Courvoisier. The Four-Star restaurant also stocks some serious scotches, such as various bottles of Glenlivet, and several MaCallan bottles, including a 25-year-old. When it comes to Armagnac, we recommend sipping on Calvados, a wonderful apple brandy from Normandy. Eleven options of amaretto (an almond-flavored cordial from Italy) are available, including Sambuca Black. There’s an excellent after-dinner drink list on the dessert menu, where you’ll find interesting grappas, moscatos and more.
  • On Scarpetta’s aperitivo menu, you’ll find $16 specialty cocktails suitable for toasting the authentic Italian cuisine from chef Scott Conant. And while there are several to choose from, we like a few standouts: the San Remo is made with Carpano Antica, Campari, elderflower liqueur and a splash of Maker’s Mark; the Spritz is a concoction of Aperol, limoncello, Grey Goose Citrus and prosecco; and the sweet Apollonia is made with a simple combination of Fragoli Strawberry and prosecco. If you’d rather substitute dessert for an after-dinner drink, try the refreshing Torino — it’s a mix of Grey Goose Citrus, strawberry and rock candy syrup.

  • While you won’t find a set menu of mocktails at the Italian restaurant Scarpetta, the skilled mixologists at the 44-seat bar can make you a special alcohol-free drink at your request. If you’re in the mood for something a little stronger, we recommend indulging in an age-old Italian tradition — after dinner, linger at your table and sip an espresso or cappuccino while enjoying one of the rich desserts. The Four-Star eatery located inside the Mediterranean-inspired Montage Beverly Hills also offers an assortment of teas, including early grey, English breakfast and oolong.
  • At Scarpetta, it’s all about keeping rich Italian traditions — and that includes the coffee and espresso service. Pair a creative dessert at the Four-Star restaurant with a cappuccino, coffee, espresso or latte supplied by local roaster La Mill Coffee. (If you’re more of a tea time enthusiast, you’ll still have plenty of selections to choose from, including earl grey, English breakfast, chai, oolong, green and white.)

Master Sommelier Darius Allyn primarily oversees the wine program at the Forbes Travel Guide Four-Star Scarpetta and he (or a member of his team) can help you choose varietals from regions such as Veneto, Sicily and Tuscany to pair with your dish. Allyn is just the 60th American to hold the Master Sommelier title, awarded by the international Court of Master Sommeliers. He has worked with a slew of fine dining restaurants and was previously at the Bellagio in Las Vegas contributing to the wine programs at several of the Five-Star resort’s restaurants.
